How many items are shown when you explicitely call the 'My eBay watching items' page?
In the so called 'Beta' eBay uses to torture especially new users there is a reduced number of lines shown and apparently no easy way to switch to another look and feel with more items shown.
Thus it may be a matter of changes (not betterments, but simply obsessional changes) eBay did once more.

Hi,
about the same problem for me: I watch 2 items and bid on 1 - "Get My eBay Items" shows none of them. Manual adding is successful. I bid on ebay.de, all items are shown in the browser.
Besides: in the upper right corner, there is "Not logged in", but in the status line I see "Done getting the sign in cookie"
Tried to get beta4, but did not find it...

'Done getting the sign in cookie' just means it completed the process of trying to get it, not that it was successful. The success status is shown by the login status in the upper right, which for you is saying 'Not logged in'.
If it's not logged in, it definitely can't get your 'My eBay' items.
Check your password, as that's the most common problem. If you hover your mouse cursor over the 'Not logged in' status, it may have a message that helps point you in the right direction, also.
As for the problems getting more than 10 items for users who are able to log in, that's probably the new My eBay beta.
